Hey guys worked on this awhile but need some help with the hop schedule and grain bill. I like the hops used and also it is supposed to be like Pliny the Elder, but a different take on it. I have a **** load of Simcoe, Citra and Centennial hops so don't be afraid to used those in tweaking the recipe. Thanks guys.

4 oz. of 90 min. going to eat the enamal off your teeth.


I like to skip all middle hops. I do 90 or 60. then nothing till 15. and throw everything at the dry hop.

(they will soak up alot of wort. you may get only 3 gal into the carboy. just an FYI)
 
Ok so changed up the hop schedule less hops at the beginning and more at the end, what do you guys think now?

i'd be careful with that much Citra, 5.5oz between 1min and dry-hop additions. I've found it to be kind of overpowering in that it seems to mask other hop aromas. I love hoppy beers (just dryhopped my pliny clone), and I like citra in small doses...I made a SN torpedo clone with citra in the aroma and dryhop, but in much more moderate amounts.

Good God, 25 ounces??? I love hops, but I think that's way overkill. I do like the idea of your timings, though. As I just wrote in another thread yesterday, I usually do a schedule of 60-30-15-5 for hoppy beers (amounts depending on the individual beer).
 
Well the thing is I have a full pound of centennial and Simcoe that I got for free and the other hops are getting a little old even though vacuum sealed in the freezer.

Ok revised the recipe a little less citra but being 98 IBU I don't think it will be over bitter , about right for the style. What I like the most is late addition hops to add flavor and aroma. Only reason I'm using so much is its free hops and some are going bad. Let me know though because brewing this on the weekend so need to buy the grain bill and everything for it tomorrow. Will you think the beer will be balanced enough with the high alcohol content to malt backbone and sugar to balance the fusel beer out. Thanks again everyone.

Dude, 25 oz of hops???? That's insane. There is no way your IBU is only @ 98, but if you do end up doing it, please post results here.
 
It's because of all the late hop addition I'm just a little concerned the grain bill won't be able to match the hop flavor. Possibly add some more malt flavor to it or more munich and crystal
 
I'm with others, 25 oz is overkill, hops on hand or not. I'm sure it'll be a lupulin delivery vehicle of tremendous potency!

The advice so far is good stuff. My approach is that the FWH/60 min hops are the most important for bittering, 20 min additions are most important for flavor, & dry hopping is most important for aroma. Using this approach I'll share what I did in my most recent brew (Tues evening) which is an IIPA.

I put 2 oz. Cascade in the mash
.25 oz Nugget FWH
5 oz various hops @ 20 min
5 oz various hops @ 10
4 oz various hops @ Dry Hop

Rough Grain Bill
8# 5 oz Maris Otter
2# 8 oz Rye Malt
.5# each Crystal 55, Flaked Rye, & Wheat

OG 1.075
Est. ABV 7.9%
IBU 172

This is my approach, but I do appreciate a 30 min addition. However I find the 5 min & 1 min additions are mostly wasted as much more flavor is achieved at 20-10 mins and much more aroma is added with dry hopping. It's amazing what just FWH combined with dry hopping will do for a brew, tremendous flavor and aroma!

As just another opinion...
Move all your 20 min to 15 and all your 10 minute to flame out. Halve your dry hops.
