Wort emergency.

It's getting late. I gotta work in the morning.

Can you just let the wort sit and do the hopping boil the next evening? Call me crazy....

I have foam appearing....

I had thought of trying to cheat (cheay myself?) on the length of hopping. Reduce the first to 40 minutes, the second to 15 minutes, third five minutes, and keep the fourth at 5 minutes. It will still take time to cool though.

I did the hopping boil, cooled, and pitched the yeast Monday night, 24 hours later. Tonight (Wednesday) it smells like great beer in the making. I used Nottinghams yeast and it really took off.
