Here's a partial mash recipe (5 gallon batch) I concocted. I appreciate any feedback - positive or negative. I am contemplating adding honey malt (1 lb) and also either maple syrup or maple extract. Do you think this would be overkill?

Grains to be steeped at 155 degrees F for 30 min then sparged with water at 170 degrees:
Crystal Malt 80L 1 lb
CaraPils (dextrine malt) 0.5 lb
Aromatic malt 0.5 lb
Chocolate malt 4 oz
Roasted barley 4 oz
?Honey malt 1 lb

Malt extracts:
Munton's Amber LME 6.6 lb
Carlson's Sparkling Amber DME 0.5 lb
Carlson's Traditional Dark DME 0.25 lb

Hops:
Target 1.5 oz - 60 min
Willamette 0.5 oz - 20 min
Fuggles 0.5 oz - 0 min

Additional:
Irish moss 1 tsp - 15 min
?Maple syrup or extract added to secondary

Yeast:
Wyeast 1084 (Irish Ale)

I can't speak for the extracts, but the dextrine is unecessary. 4oz of roast barley will also be too much, you'll get a lot more flavor from it than you might expect. I also think a full lb of 80L will be a lot for an English Brown, but we need more info, like target OG/FG and IBU's. Will all those specialty malts it almost feels more like a Scotch Ale.

If it were me, I would only add just the Carmel 80 or the Honey malt, you could even do a 1/2 lb of each, but I wouldn't exceed a pound. I'd also drop RB and do a 1/2lb of chocolate, and I'm not sure if you would really need the Dark DME, but I've never done PM's so I don't really know.

What's your target OG?

The maple syrup sounds interesting, but possibly easy to over do. Everything else looks pretty good.

Thanks fellas.

I've tweaked the recipe with your advice to look like this instead. What do you think?
