My third brew ever was also my first ever porter, or more accurately my Vanilla Beam Porter. I should let it age more, but my friends and I can't keep our hands off, therefore it is half gone already.
Thursday I'm brewing a Christmas beer, but thanks to by VBP, my mind is already thinking porter, porter, porter. I'm too new at this to repeat my first two successful endeavors and I have five others (two heavies, so I must keep away from them for a spell) coming along nicely, so I want to experiment.
I'm thinking of a caramel cream porter (extract-with mashed grains). No definites yet, and I haven't plugged into Tastybrew, but:
-dark lme, perhaps a bit of amber dme as well,
-chocolate malt,
-Crystal 60L or 80L,
-lactose
-perhaps a bit of real caramel ( melted sugar)
-hops haven't been explored
I'm looking for the porter taste, laced with a creamy caramel flavor. What say anyone?
BTW, thanks in advance and for those who have offered answers in the past, cheers! Some friends were enjoying my present porter and told me they are thinking about getting into homebrewing. I was offering encouragement since one has the option of cloning your favorite commercial brew, tweaking it, or better yet (my .02), having the luxury of thinking what can I concoct myself!
