Newbie with large carboy - need recipe help

We got a really good deal on some 7.5 gallon carboys, which take us out of the area of most 'kits' for our first brew. Does anyone have a good recipe for something simple (we were thinking 'red ale') for our first brew that has this kind of volume?

Why would it take you out of the area of most kits? Enjoy the extra headspace while you can and go with one of them kits for your first batch.
 
Agreed. You want extra head space for your primary. Most people use 6.5gal buckets/carboys for primary and blowoffs still happen. Enjoy the extra space and get a kit
 
Primary, no issue. If you use a secondary (recent trend is to skip for a longer primary) you will want to reduce the headspace as much as possible. During your fermentation the process puts off CO2. That CO2 will be creating a "blanket" over your beer protecting it. Also, with more headspace you won't have to worry about violent blow-off's.
 
I thought so. And all our carboys are the same size (7.5 gals), so when we rack into the secondary we will want less headspace. Other than getting a smaller carboy, what else should we do if we don't bump up the volume?
