Is that so called "bubblegum" flavor achieved through temp control during fermentation,
getting that "bubblegum" flavor in my weiss beer

Higher fermentation with a bavarian yeast should give you that bubblegum flavor. It's actually a banana/clove taste, but a lot of people think of it as bubblegum. I'd shoot for around 68F.

I got INSANE bubblegum with Danstar Munich. Fermented around 16 - 18C.
