Odell's Saboteur - Clone?

Hey guys,

Quick question. I had Odell's Saboteur. I'm in love. So, naturally, I want to make it. I have a bottle chillin and waiting for me to harvest the yeast for a starter.

Question is, for those of you who have had it, you think I could just make a standard brown ale with oak cubes and add the Brett I harvest from the bottle?

Could it really be that simple?

That will certainly get you close (if by "standard" you mean strong). I had a sample of it a few months back, I remember it being pretty oaky (it may have mellowed out since then).

It will probably take 6-9 months in secondary for the Brett to complete it’s job, which will give plenty of time for the American oak to infuse (go with heavy toast, and soak it in bourbon for a few weeks before adding it to leach out some of the harsher flavors, or give it a quick steam first if you don’t have time). Don’t go too strong of the bittering or roasted malts.

Thanks, always happy to offer advice if you run into a question/issue/whatever. Good luck getting a few beers in your pipeline.

This recipe is the closest I've done to Saboteur, a Brett C, wine oak, old ale: http://www.themadfermentationist.com/2007/08/funky-old-ale-1st-tasting.html still getting better after 4 years. Might be a good general place to start, but go bigger.
