I'm making a light pilsner that calls for corn flakes.
Why not use corn sugar(dextrin) instead?
 
Well, for one, corn sugar is 100% fermentable, so it will dry it out. If that's what you're going for that's fine (i.e.- brewing a tripel- upping the alcohol, but lightening the body). With a pilsner, that's probably not the effect you want. Those corn flakes will add something to the body of your beer, which is to say the mouthfeel.
 
Both corn flakes and corn sugar lighten the body of beer. Ive heard (on this website) that using too much corn sugar will give a off flavor.
