3 gallon.
Primary:
Nottingham yeast 3 tsp ( reconstituted in 1/4 apple juice and 1/8 cup of darjeeling tea).
2 1/2 tsp nutrient.
1 tsp energizer.
1 lb Dark Muscovado sugar.
1 1/2 cups steeped Darjeeling tea.
2 1/2 gallons of BJ's earth pride organic AJ (minus 1 pint glass from the 2 1/2 gallons).
Secondary: dryhop 1 tsp saaz.
put 1/2 gallon of cider in primary with nutrient and energizer and tea. shook the beegeezus out of it. Put the sugar in pot with apple juice and heated to dissolve, heated only "did not boil". once dissolved added to primary and shook again (gets foamy).
added next gallon and shook again to aerate. check to make sure yeast is active
added next 1/2 gallon and shook again, PITCHED a nice foamy yeast, and rinsed the funnel with the rest of the AJ minus the pint.
OG:1.070
Pitched @ 72 degrees
happily fermenting along.
Going to rack into secondary when this reaches 1.010 - 1.005 add saaz hops for 2 months and bottle condition.
