Stupid Elec't Noob Question!!

OK.. So I have wanted to move into electric from my old turkey burner.. My question IS?? I wanted to know if 2 heat sticks run off of 2 separate dimmer switches would work to heat and hold water & wort at a temp easily?

Also how do you keep from burning/scorching the wort?

Not knowing much about dimmer switches, I'd wonder if they had the capacity to handle that much current. Even a 1500w element is something like 11 amps isn't it?

A Leviton brand with heatsink is good for a 2000w load.

A pwm with ssr is cheap, safe, and more controllable, IMO.
