OK now that my first two kegged brews are kegged It begs a question my lager is 11 weeks old and filtered (thru a 1 micron) so should be good to carbonate and drink..

My Wheat is in the keg but just out of the secondary (read 3 weeks old) should I start carbonating it now or wait until it has aged a bit more then carbonate it?

I have been wondering the same thing for a while.... I asked an award winning home brewer about this and he said that after the fermentation is finished he kegs them and then carbs them and lets then sit at 38 degrees in his beer freezer and lets them age that way for as long as he wants. This is what I now plan to do in the future.
