If I where to going to perform a yeast wash could I use lactic acid to acidify my water instead of phosphoric acid? I read as long as I have it chilled to 36 to 40 F and lower the acidity to 3 with a food grade acid all is cool.

If you have decent cleaning and sanitizing procedures, using an acid wash is probably over-kill. Just use water.
