OK, tell me if I've gone completely nuts on this. I think this can work.
2.5gal boil, 5gal batch
Mash together in a bag with a good dose of powdered amylase enzyme:
1lb Instant Rice
1lb Quick Grits
After mash, bring to boil and add:
1lb XL DME
1oz Goldings or Saaz hops at 30min
2lb XL DME late addition
1lb Wheat DME late addition
OG 1.046
US-05 yeast
