I recently brewed an Irish Red wannabe as an experiment and it came out pretty darn good! So now I want to treak it a little and turn it into IPA. Here's what I got so far. Any thoughts?

11 lbs Pale Malt
2 lbs Caramel 60
2 oz Roasted Barley
Safale S-05

All Centinnial Hops:
1 oz @ 60 mins
1 oz @ 15 mins
1 oz @ 5 mins
1 oz @ 0 mins (flamout for about 10 mins)
2 oz dryhop in secondary for 7-14 days

I'm not looking to conform to any set guidelines....basically i want a SIMPLE, malty, amber/red beer with lots of hops aroma and flavor. Whaddya think?

I'd so this. I just did one with 4oz of centennial and 3oz of amarillo, tasted awesome at bottling looking forward to drinking some next week carbed up.
