You chilled the wort before adding the yeast right. How much top off water did you actually use. Looks like 3.5 gallons?

I should note that the slide show also includes documentation of my 1st to 2nd ferment transfer that takes place 10 days after brew day.

am i reading that right? is that your OG that you are showing in those end slides? what temp was that at?

No, sorry to confuse. That is the gravity taken between 1st and 2nd ferments. I'd say the temp was in the mid 70s.

I realize I'm going to be more OCD if I'm going to keep up with this hobby!:cross:

ok, had me scared there, if that was OG, even if the sample was 80+ degrees, you would have a 1% beer... the ultimate session beer...

Nice camera you go there. Great pictures. What was the temp before pitching. Didn't look like much ice in there, or was that pic out of sequence showing the ice melted and water drained after chilling?

I love dry hopping porn. :D

Bottled water + gypsum is a wise choice unless you know your water is great for brewing. Most city water is marginal, and requires some extra work to use it.

I'll bet this one comes out good...

nice, great quality photos. I'd love to hear how the brew turns out!

:off: Now, about this "strictly IPA" thing.... ;)

I was sure to get the temp down to the upper 70s before pitching the yeast. I used that little bit of ice, which was quickly gone, and then poured cold water on the outside of the pot for about an hour (!) as I rotated it.
