I have my simcoe gambrinus all finished in primary and was thinking about dry hoppng and was wanting peoples opinion on whether or not I should I added 1 oz at 60 minutes of boil and 1 oz at 5 minutes. The gravity was 1.049.

I'd personally cut the 60 minute to maybe .5 ounce and put the rest in as a late addition. Then dry hop with a few ounces. But, nothing wrong with what you're planning.

I personally love a beer that has been dry-hopped, the aroma is wonderful. It won't really add to the flavor, but definitely will add to the experience so if I were you I would probably dry-hop with 2+ ounces.
