When the SG reads the target...

When the SG reading reaches the target reading at the primary, do you rack it to secondary or still wait till all the activity settled down? My Nobel Trappist Ale started as 1.0152 and 1.010 after seven days (recommended levels are 1.050-1.053 to 1.010-1.013). Should I check it next couple of more days or just go by the activity because target SG is achieved? It smells and tastes good.

If it is still actively bubbling, wait. If it isn't bubbling, check it in two days. If the gravity hasn't changed, rack it.
