My girlfriend has been getting bad migraines for the past 3 weeks and the neurologist told her today no more red wine and that the sulphites might be causing them. She told him that I was making the wine with no sulphites and he told her that they are used to clean and sterilize the bottles so she should avoid.

Can I make a Merlot without any sulphites at all and if so what else could I use to safely sterilize the bottles??

You can make wine without sulphites just don't expect it to age well. Sulphites occur naturally in all living things and are present in small quantities even in unsulphured wines.

I use generic Oxy-clean to clean and star-san to sanitize bottles.
