I am making something similar to the brewers best summertime ale. I am using safale us-05 yeast. Should I do a yeast starter? I have heard this type of yeast really doesn't need it. Also I got one 11.5 gram packet. Is this enough for a 5 gallon batch?

No starter one pack is good but rehydrate according to package directions. 05 is my go to yeast always have a few packs on hand

Yup. rehydrating dry yeast reduces lag time, which is the reproductive phase right before visible fermentation begins. Rehydrate for 20-30 minutes, then bring it down to within 10 degrees of current wort temp before pitching. This will prevent the yeast from shocking due to the temp defferential.
