Amarillo's on my mind

This is a simple IPA that is pleasing for hop heads while still being approachable to new craft brew and homebrew drinkers. Named Amarillo by Morning IPA because of the use of Amarillo hops for flavor/aroma and was brewed under influence of George Strait's Greatest Hits.


All my recipes use Maris Otter for the base grain as I believe it allows me to use fewer bready/biscuit malts to make up for what would otherwise be lacking with US 2-row. A little more going on with the crystals in this than most IPA recipes I've brewed but I like more in an IPA than just an IBU delivery vehicle. I look for a little more interest in the malt background than just hiding behind the hops. The difference is slight but it is noticeable if you look for it. Next batch may get Special B instead of 120L just to get a touch more fig. I always add a few handfuls of rice hulls to aid in lautering.

Brewing Water is fairly hard well water straight from the tap with no additions.

Mash Schedule

My MLT is an Igloo 10 gallon cooler with a SS false bottom. I currently use single infusions and sparge using Bobby_M's "No Mash Out Double Batch Sparge method.

Single infusion at 152°F for 60 minutes.

Recipe uses Rager formula for bitterness and a Brewhouse Efficiency of 75%.

Ferment in primary at 65° for 23 days
Rack into secondary on 1 oz Amarillo for 7 days and then bottle/keg.

Extract conversion for 5 Gallon batch with 2.5G boil volume. (3 G pot)

Notice late 15 minute addition on the 6lbs 9.6 oz of XLDME. Not exactly the same as the AG recipe above, but should be close.

I recieved a bottle of this in the 2009 Kolsch Swap and here are my notes:

There is a potent citrus and silghtly floral hops aroma the malt comes through (but only a little) in a fainy sweet smell.
The beer pours to a deep Golden/Orange color. Slightly hazy, but to style (especially in light of the dry hops indicated in the recipe above). There was an 1/4" off white head from a medium agressiveness pour which dissipated to a ring at the surface.
The potentcy of the hops aroma decieves the bitterness. I was expecting a much more bitter beer, but was pleasantly surprised by the balance. Don;t get me wrong this IS and IPA with the bitterness you would expect, but the hops aroma was awesome and I'm usually only used to that in "IBU bombs". After the full (not harsh) bitterness there is a little lingering sweetness at the back which is very nice.

Over all a very drinkable IPA with lots of hop flavor and aroma balanced appropriately with a slightly malty finish .
