I have some hops (mostly leftovers) that have been wrapped up in the freezer for a while and it's probably time to use them...

What would you do with the following:

3oz Amarillo (unopened, but not nitro-flushed and about a year old)
1oz Simcoe (unopened, but not nitro-flushed and about a year old)
3/4oz Herzbucker
1/2oz Golding
1/4oz Chinook
1/4oz Hallertau

I could probably make a pretty good APA with the Amarillo and Simcoe. Maybe if I throw the Herzbucker, Chinook and Hallertau in for bittering and split the Amarillo and Simcoe between 15, 5 and dry-hop it could make a reasonably good lightly-bittered IPA.

What do you think?

I'd probably use the hops just as you suggested!

I'd make an APA or IPA.

Bitter up to 30 IBUs with the odd hops at 60 minutes(and some of the amarillo if you need it), and then use the amarillo and simcoe (mix them together) at 15/5/0/dryhop.
