So I brewed an DME Blonde Ale and came no where near the color I was looking for. Does color come in more specific when you move to AG or partial grain? It is not even close to blonde, it resembles more of a cream ale! Any ideas?

The color will get lighter with AG. The key with a PM to keep it lighter is to add 1/2 the extract for the last 15 minutes only.

I switched to AG to get more control over color. I used to only use DME as my base malt and then PM the rest. I also tried a PM with half of my base malt included in the PM.
