I'm almost at the end of my single tier stand build which will hold a direct fired propane RIMS setup, with just a few items remaining.

I know there are many EE's and electricians (and experience) on here, so here's hoping:

I am having troubling with the wiring design of this setup:

120V Line-->pilot light switch-->GFCI outlet-->Load.

If this is contained in a plastic 2-gang weatherproof box attached to my brewstand, am I going to have an issue with the grounding of this system? If I put the GFCI protection elsewhere, can I just pigtail the grounds back to the GFCI protected outlet?
 
I used a metal weatherproof box so I could ground the outlet and the stand and moved the gfci protection back to the wall.
