Greetings

I recently started my first batch of apfelwein and will soon be starting a second. I have 2 gallons of unpasteurized apple juice that was accidentally left out for 2 weeks at room temperature. There were traces of mold on the surface so I tossed the juice in the freezer until I could find out if it's salvageable.

If I strain and pasteurize this juice could it be useable for apfelwein?

I'm considering 180° for a few minutes to be safe. Also wondering if upping the octane will have any sterilizing benefits, to like 15%?

Thanks

I don't know, but I do know that for the cost of two gallons of juice I would just toss it. Not worth the effort to save it as it probably won't make it good.
