I was just wondering if anyone had brewed with Nottingham Ale Yeast at the lower end of its recommended temperature. According to Danstar's website they can go as low as 12 - 14C. I am going to brew with this stuff in a few days and I want to ferment it as cold as possible. Just wondering if anyone else had tried this, how they found it, and just how cold they think I could go. Thanks

You can go pretty low, but it will take longer. Like most yeasts, the cooler you ferment, the less yeast profile you get out of it, although Notty has a pretty low profile to begin with.
