I brewed a batch of brown ale (OG 1.062) on 9/13/09 around 3:30 PM. I pitched S-04 and it was bubbling by evening. 9/14/09 in the morning it was going well at about 72 degrees. By Monday the fermentation was going crazy, all kinds of large chunks zooming around in the carboy but I noticed the temp was 78. I immediately put the carboy into a water bath and the temp was down to 68 by 9/15/09 @ 4 PM but the krausen had dropped and the activity is almost nil. Did I shock the yeast with too drastic of a temp change? I was worried about the off flavors associated with high temps. Should I do anything or just wait 10 day and take a hydro reading?

TIA,

Wes Hunkler

There's nothing you can do but wait! Might have a few esters or higher alcohols in there, but hard to tell from where I am!
