haha i used to date a girl out in ellensberg, and every time i was out there i would pick some up, i just happened to move right as they started shipping around the rest of washington.
Seeing as the Quilter's you'll commonly be buying is only 7.8 ABV, i think that this recipe you found would be for the original recipe by Jim Quilter, when he developed it as a Barleywine.

Maybe if you took that recipe to a calculator and just toned it down to 7.8?
I sent the a letter a week or so ago asking if they had any tips towards making a clone of the Irish Death
If they write back hopefully it will be useful towards putting this recipe together!

I emailed iron horse and asked them if they would share the recipe and this is what they sent me back in reply. However I can't find any notes on the ibu's! I happened to save the yeast from a couple 22s I bought so yeast won't be a problem. I am going to toy with it and throw up a recipe any help would be great, I want to make this in the next week.

2 row, crystal 75, munich, caramel pilsen, flaked barley, chocolate, roasted barley, black patent malt. columbus, cascade, and mt hood hops.

Ok i have had enough of these beers to tell that its not that bitter and kinda smooth and not roasty. very well balanced not very hoppy at all. tell me what you think if this is balanced enough hops to grain?
 
That looks like a great recipe, but I can't figure out why Northwest hops would be used in an Irish ale recipe
 
Ya, I agree completely. Irish death isn't very hoppy, the smoothness/sweetness of malt is the gold star in this beer. I would prob take out a half oz of cascade that goes into the boil at 60min. Maybe decrease cascade .25oz also? That might be pushin it. The grain bill looks pretty nice though. Like bottlebomber said, its gonna be tough to clone this with just that info lol. I'm not the best at visualizing a brew by the recipe, but if it were me, I might add a little extra flaked barley to emphasize the silky feel of it. Let us know how it turns out, and what the recipe you did looks like! I'm pretty excited to see how this goes! :mug::mug:
 
So how would you guys do the hop additions? Would you do 1 oz Columbus for 60 and maybe .5 cascade for 30 and 1 oz Mt hood for 10 mins? Or what give some ideas
 
I was thinking .5oz columbus for 60, .5-.75oz cascade for 30 (or 45?) and 1oz Mt hood for 10.

The biggest decrease should be in the hops that will be in the longest, since it's those hops that will be doing most of the bittering.
 
Ok so I got the grains and hops and today I am making the yeast starter with the yeast i collected from a couple 22s of irish death. i went ahead and changed the hops to .5oz columbus for 60mins, .75oz cascade for 30mins and 1oz Mt hood for 15mins. I know its a shot in the dark but i have plenty of time to tweak this recipe as brew it in the future and drink some really good beer in the process. who knows maybe it wont taste anything like it and i just make a kick ass recipe!

So was drinking a bottle of this & I was wondering if perhaps they might have used some peated malt?
 
No just the grains listed above. iron horse brewery emailed me and told me what grains they use for it
 
ok so i got this in a 6 gal primary and the thing is going crazy! I have had to change the blow off water twice now and its sounds like an old coffee pot going off *gurgle gurgle*!!! anyways the yeast from the bottle is obviously doing the job it was set forth to do. i made a small yeast starter with the yeast in a couple 22s and kept upping the starter size till i had enough to pitch. my Attenuation might be more than i thought because i dont know what to expect with this yeast but i will let you know, for science :mug:
 
Bigben, I'm so glad you figured this out, Irish Death is my favorite stout/porters. It's on tap at several pubs around my neck of the woods, but I prefer to drink at home and usually buy the bombers from Albertsons. This is definitely in the future brews within the next few months. Thanks for researching this.

Well the research Is still going not sure what to expect from the yeast yet as I stole it from the Irish death bottles themselves. The grains are accurate but I am most likely going to have to brew a few batches to hone it down to an accurate grain bill. I will keep updating as a go so that others if they want can join in the research as well.

So I took a sample of it today and it tasted awesome can't wait to see how it turns out in the end. I changed the recipe a bit from the one posted though.

I've had a few of these beers now, only really available for those of us that live in WA....and I'm completely hooked! Would love to try and brew a clone, but haven't really found anything on the net, save for this:

Yes it is the original Barley Wine. I got the recipe out of a homebrew book and put it to a calcuator. I agree with if you want it smaller, put it in another calculator to scale it down in gravity. I haven't had time to try and brew it yet, been a bit busy with work.
