I've read all kinds of posts and other sources about the rest.
I am brewing an Oktoberfest lager. Currently at 5 days @ 50F.
It is in a freezer with Johnson, digital controller.
When it is time for the rest, do I just ramp up the temp to 60, and wait a week or so?
Seems like it would take a few days for the beer temp to raise to 60.
Or
Set the Carboy out of the freezer to get it up to temp quicker?
