Looking for a Berliner Weisse recipe. Just had a New Glarus Brewery (WI) Berliner Weisse and it was uniquely refreshing. The label stated it contained pinot grigio as well as Reisling grapes and German Wheat.

Anyone ever make one of these before? Looks complex to me.
 
Sweet. The bottle also claimed they used 5 different strains of yeast. This is all new to me. But I loved it.
 
How vigorous is the fermentation? I use a 6.5 pail and a 5 gallon better bottle. Just wondering if I should put 5.5 gallons in the primary, and then the better bottle up for the secondary.
