Does anyone know of a good stout recipe using cacao beans? My usual process - I steep grains for 45 mins, add some extract, 60 min boil(hops at appropriate times) - about 15 mins left in boil I add the rest of the extract. I also have the option of using a secondary if necessary. I've also read about people adding lactose, which sounds like it could be good addition.

Lactose will sweeten it up, if you want sweetness go for it. It's unfermentable, so you can add it at any time.

Pretty much the best thing to do would be to get a good stout base and just add the chocolate in secondary.
