I bought candi sugar and the recipe calls for candi syrup. Any difference? For the sugar do you just stir it in a little at a time?

PS- My first all grain batch, so I want to have as many bugs worked out before we start.

Thanks!

They'll certainly contribute different quantities of sugar per weight. Candi sugar is sugar, and candi syrup is sugar + water, so you'll need to figure out how to convert the weight from of one to the other.

In either case, I would add it slowly as it dissolves. It shouldn't be that tough to integrate it in, but you'd probably want to avoid having a big pile of sugar sitting at the bottom of your boil kettle.

Just compare the sugar content of the syrup with the sugar content of the candi sugar (should be 100% or near 100% of weight) and add the appropriate amount of candi sugar.
