I plan on making a sweet oatmeal stout today, the recipe is a slight variation of a recipe from BYO for an oatmeal stout. I really like cinnamon, but my LHBS told me that adding cinnamon would most likely get lost with the hop flavors... So I planned on adding just vanilla until I saw that they have cinnamon extract at the grocery store, so I bought an ounce of each...

I've never made a 'sweet' beer, so I'm kinda just experimenting... Has anyone used a cinnamon extract before? I have to believe that it's more potent and should be noticable through the hops, but I'm not sure exactly how much to use, so I'm planning to go with an oz...

Hold off on both of the extracts until the batch is in the clearing tank. You'll have better control. You'll probably want some lactose at that point as well to tune the sweetness.
 
In the caramel cream ale recipe, it called for 2 ounces of vanilla extract in primary, then 4 ounces when bottling. The vanilla flavor comes through strong but not overwhelming... I'm thinking you might need more than an ounce to get the cinnamon flavor through.
