I'm planning on brewing the AHS Our Special Holiday Ale. One of the customers left a comment saying they used twice the amount of spices. Do you guys think this would overdo things or provide a nice flavor? Anybody ever tried it on a similar spiced winter warmer type beer?

...Depends on the amount of spice. I tend to error on the side of caution when it comes to spices as it can easily be overwhelming.

Time to revive this long dead one...

I brewed this beer October 2010 and did NOT double the amount of spice. Man I'm glad I didn't double it. Even with the amount that came with the kit, it took until JUST now (15 months of aging) for it to get a nice, balanced spice taste. Now it has a great almost fruitcake like flavor to it.

Remember, the thing with spices is a little goes a LONG way!

I like the Harpoon winter warmer. The spices are in the middle somewhere, giving the whole thing a smooth dark flavor.
