Hey I'm thinking of making some peach wine and want to hear your thoughts.

Ok, the ingredients are these...
Done in One Gal jug
1. One Quart of peaches
2. 3lbs of sugar
3. 3 Quarts of water
4. Yeast

This is a cut down version of a larger batch, the original ingredients are...
Done in Five Gal jug
1. One Gallon of peaches
2. 9lbs of sugar
3. 3 Gallons of water
4. Yeast

What do you think of this and what kind of problems do you see with the above mix. I don't have the means to do the larger batch so it is One gallon for now. :tank:
 
My experience with peach wine is that the peach doesn't come through very well. The final product is a very light peach flavor (though in my case, it was also jet-fuel levels of alcohol for reasons I can't quite explain). They do sell a kind of peach extract you can add to make it taste more like peach, but I found it was kind of a thin peach taste and inauthentic.
 
I used 9 1/2 pounds of peaches in my 5 gallon batch and it was barely peach flavored after fermentation. I used 2 cans of frozen peach juice mix to back-flavor it.

It will be one year old in a few months, I have not tried any yet.

I'd up your peach to 4 pounds, not including the pits.

Volume measuring is never a good way to judge. there could be 2 pounds or 4 pounds in a quart.
