Ommegang Hennepin clone

Sorry, I do not have the recipie on me...

But I made this clone this weekend and the yeast I was given was a Wyeast Belgian Wit...

I thought saison's use saison yeast???

Also, since it is a Belgian Wit yeast I used, should I still ramp up the temperatures to 80-85 degrees during fermentation? Any ideas?
 
This clone recipe calls for 550 or 1214. I don't think Hennepin is nearly as dry or peppery as DuPont (VP or Foret).

Hey, thanks for the link... The isnt quite the recipie is used, but its pretty close.. I guess I will just give it a try in a few weeks and see how it is... either way, I am pretty stoked.
 
If I remember correctly, Ommegang uses a proprietary Belgian strain for all their beers, so the Hennepin isn't as 'saisony' as something Saison DuPont. A Wit strain seems like an unusual choice, but what do I know? ;)

Good luck with the brew! I need to do a proper saison soon.
 
Don't want to dredge up an old post but I suspect that the new Yeast Bay "Northeast Abbey Yeast" is from Ommegang
