What size o-rings do i need for the o-orings that go insoie the bolt that locks down the thermometer? The blacks ones not the red one.

Walmart carries a set of O-rings for faucet repairs. It's a mixed package. I dunno what the actual size is but, there are some small ones in there that work perfect.
Also, Radio Shack has some mini grommets that work good too.
