:mug: Well guys I'm sitting here enjoying my first real home brew! As I said in my introduction post I have tried a few other times with a Mr.beer to start with and then I tried a few times with a very shoty home-made set up. All previous attempts were not good resulting in poor tasting beers.

This time around I joined this community, did alot of reading and bought a good intermediate set up. Did I mention that I did ALOT of reading? :) So after all that I decided on a brown ale. I made some adjustments to the recipes adding some grains, cara-pils (sp?) and fresh malt. I went with some cascade hops,and 2 pounds of malt extract. 2 packages of muttons yeast (just to be sure with all the malt I added. :) Fermented for a week, racked to the secondary. Cleared for a week. Racked to the keg and forced carbonated for 24 hours.

Today I got home and got to tap my first real home brew and success at home brewing. It's a little on the hoppy side 2 oz might have been a bit much for my tastes, I like less hoppy beers.

Man this is great! I've only had 3 pints and I'm already buzzed! What fun this whole process was. I know now that I"m hooked and I'll be home brewing for a while to come. Actually I already have my next beer planned. I'm going to do a imperial stout. From the looks of the recipe it should right up my alley!

And in a month, when the keg blows, you'll realize it got even better after aging a little.;)
 
hmmm followed the recipe for the most part, ferm times and everything were to the letter. They left out the part about kegs blowing up ;) Think its just a personal thing. I've read lots of recipes that have beer ready to go in the 2-3 week process. So I'm not sure exactly what your getting at? could you explain?
 
What David 42 ment was when the keg is emty and the keg blows C02 when theres no more beer left, the beer seems to get better because it has had more aging time.:mug:
 
God I'm a newb! LOL Thanks Smog for clearing that up. LOL

And now that I know what your saying Dave..heheh yeah I noticed even last night that after 4-5 pints the taste was improving? don't know why could have just been the beer! :)

I'm saving the rest of the keg for tommarow night, so well see if that taste is better.
 
Hey newguy, you better go easy or start brewing twice a week if your going to save the rest of the keg for tomarrow night?:ban:
 
LOL Smog yeah you got that right! Actually I'm going to do my imperial stout today in fact and 5 gal of applewein. Figured I'd should be set for Feb:tank:

And yes only had a few pints yesterday. Still have a little more than half a keg for tonight!:mug:
