I've got a white labs pitchable hefeweizen # 5 ale yeast that has a best buy date of jAN-18-09. The yeast has been sitting in the fridge this whole time and I was wondering if it would still be good to use? Also wondering if anyone has used this yeast before? please comment on what type of brew and what types of effects it had on your beer.
 
Old tubes (6+ months past their exp date) of White Labs yeast are usually viable, but I've had some take over 24 hrs to start up on a stirplate at 75-80 F. Can really take them a while to wake up. Would highly recommend that you do not pitch directly into your wort. Could have several days of lag time.
