Hey guys,
Ive done my research here and have a question about aging and kegging. I only have one keg so i must age in the secondary fermenter. I just read that beer needs carbonic acid to age. If I mix in a bit of corn sugar in my secondary and age, do i need less psi in the keg when I transfer it and let it sit at that pressure to finish of the carbonating and serve?

You beer will age in the secondary without carbonation. If you did add corn sugar to your secondary, you would simply get more fermentation....which if you fermented in a sealed keg, would carbonate the beer. But, if you are only using a carboy...the CO2 would bleed off through your airlock and the beer will be just as flat. Not to mention be 'younger' and start the aging process all over again.
