Would like to hear any recipies/stories about experiments with yeast and beer.

For instance, has anyone ever mixed champagne yeast in with beer?

Has anyone ever used some of the wine yeasts that ferment to 20% to make beer?

Have you experimented with mixing yeasts?

Have you made your own "hybrid" yeasts?

I've been thinking about doing some of these things and would love to hear anyone who has done a little experimentation.
 
Au Chuffe did a Saaz and Armillio Belgian IPA or what i like to call BIPA. It was AWESOME!!! It had a head you could float a quarter on if you know what i mean.....BOYAAAA
 
I'm sure you mean Houblon Chouffe. As per the bottle, it contains Saaz, Amarillo, and Tomahawk. EXCELLENT beer, and as noted, tremendous head.:off:
