Goin to brew up an IRISH red ale today.
lookin at a 2.5gallon batch size

6lb marris otter
.5oz of roasted barley
5oz of crystal 20l
4oz of aromatic malt

was thinking for hops:
.5oz williamette (bittering) 60min
.2oz crystal (flavor) 10min
.2oz crystal (aroma) 0min

Safale s-04

suggestions on any part?
 
well Here i go starting my brew day..got the above ingredients in hand.but adjusted to 1oz of roasted barley and 5oz of aromatic malt
 
Well so far so good. I got a great red color from the running's. Pitched the yeast without a starter. less than a half day out and it is fermenting like crazy with Safale s-04.

Just recently started using some of the dry yeast and it definitely does very well. Saves money from the typical Wyeast packs!
 
came home today and my whole apartment smelled like my irish red.. the s-04 is fermenting like crazy...my OG on this was 1.070 so who knows how this goes...its a 2.5 gallon batch

I did a step mash on this...mashed in with about 1.5 gallons of water for bout 20mins @135-140 then brought the temp up to 153 with another half gallon

the reddish color just amazes me!
