I use a hop sack when adding hops, especially pellet hops, and i always wonder when i should take the sack out. When I add late addition hops either with 5 minutes left or at flame-out, i usually let the wort cool down a little bit (in ice bath in sink), before i take the hop sack out. Does it really matter how long the late hop additions sit in the wort? Should i let them sit until I am ready to put into my fermenter, or can i take them out after i remove the pot from the stove? Defenitley a Noob question but you don't know until you ask.

Well, it matters a bit, but it does not have to matter much, and it is very difficult to quantify. The faster you chill, the less it matters.
