I brewed a Irish stout about 5 days ago. I got a few friends coming over tonight and I thought I would brew a 5 gallon batch with them tonight. Problem is I only have one 7.5 gallon bucket to put the finished wert into. Do you think it's ok to transfer the Irish stout over to a carboy now so i can brew tonight or is it crucial that I wait the suggested 7-10days?

you can transfer whenever you feel like it, no problem. general rule, be about .01 (so at 1.020-1.025 for most beers) from target FG before you do, so the yeast in suspension are still able to finish the job. rack a little of the yeast cake just to be sure.

Leave the Stout where it is. It doesn't need a secondary and chances are that it hasn't hit it's final gravity yet.
Brew a smaller (3 1/2 to 4 gallon) batch in the 5 gallon carboy.

Test your gravity. If it's close to FG, you're fine.
Also, you could swirl the yeast into suspension, then transfer to secondary. You don't need as much head space this far into fermentation.
