Foghorn Leghorn

11 lbs. Light LME
1 lb. Crystal Malt 20°L
3 oz. Chocolate Malt
1 lb. Victory Malt
2 oz. Crystal Malt 80°L
2 lbs. 2 Row Malt
3 oz. Challenger hop pellets
1 oz. East Kent hop pellets
2 lbs. Light DME
1 tsp. Irish moss
1 pkg. Wyeast 1028 (added to a 2 quart starter)

Procedure:
Steep grains in 2½ gallons of 155°F water for 45 minutes. Sparge w/2 gallons of 170°F water. Add extracts, bring to a boil. Add 2 oz. challenger hops, boil for 30 minutes. Add 1 oz. Challenger hops continue to boil for 15 minutes. Add ½ oz. East Kent hops, boil 8 minutes. Add the other ½ oz. East Kent hops, turn off heat. Chill to 70°F, pitch yeast, aureate well. Follow fermentation procedures.
