What would happen if I use this grain bill without a protein rest?
7# Briess 6-row pale
2# flaked maize
1# Weyermann munich
From what I read the protein rest is needed for more than 25% under-modified malts and adjuncts and the corn is less than 20% of the grain bill. The 6-row has high diastatic power but more protein. Will I just get lots of hot break and chill haze or will there not be enough free amino acids and medium proteins for body and head retention?

You'll definitely get a lot of hot break. I cannot predict if you will get chill haze.

You probably will make a fine beer without a protein rest, but you'll make a better one with it. Do a thick one, about 1:1.

I should have room if I use boiling water for the second infusion(I use a 5 gal mlt) or I could do a decoction.
