Help for a 6 gal Porter Recipe

Hi,

Iv tried to adapt a couple of recipes for 5 gals, so that they will work in my 23L/6.07 gal batch gal batch.



* 0.5 lbs. Black Patent
* 0.84 lbs. "Dark Caramel colour" Crystal
* 11.9 lbs. Dark LME

* 1 oz. Southern Cross 12% (60 min)
* 0.5 oz. NZ Fuggle 6.9% (10 min)
* 0.5 oz NZ Fuggle 6.9% (1min)
* Safale US-05.

I have no idea what the OG or IBU's are. Do you NEED the chocolate specialty grain? I could get some and add as well I spose, but is becoming an expensive batch! How do the hops look?

Otherwise, I was looking at the "Port O' Palmer - Porter" recipe on how to brew...again bulked it up. http://www.howtobrew.com/section4/chapter19-3.html

* 11.9 lbs. of Dark Malt Extract (syrup)
* 0.5 lb. of Chocolate Malt
* 0.84 lb. of Crystal 60L Malt
* 0.5 lb. of Black Patent Malt

* 1 oz of Southern Cross 12% at 60 minutes
* 3/4 oz of NZ Fuggle 6.9% at 30 minutes
* 1/2 oz of NZ Fuggle 6.9% at 20 minutes
* Safale US-05

Any thoughts apprieciated :)
 
That seems like way to much malt extract. For 6 gallons, I would imagine that you could used 7-7.5 lbs. if you are trying to replicate the palmer recipe.
 
The only reason there is so much extract is that it comes in 4lb cans. Ok thoughts on these two recipes I made with BeerSmith... note the different batch sizes please.

I really don't know if the hop amounts or times are ok for a Porter? Should the Fuggle be added later then I did?

Thanks for your reply - that makes sense, most Porters don't have hop aroma. Iv changed things around a bit, changed hop times etc, and trying to get OG 1060s. Iv also added the extract to the boil some at 60min some at 30min so I don't need as many hops.

Is this better?

Any thoughts on weather I need Chocolate grain as well? Does the latest recipe look ok with the hops now? The IBU's and OG seem to fit the Porter style ok...
