I've had the idea for a wheat-based stout in the back of my mind for a while. I'm thinking about brewing this in a few weeks. What do you guys think?

Fermentables
6lbs Wheat LME
.75lbs Chocolate Wheat Malt
.75lbs Caramel 40L
.5lbs Caramel 60L
.25lbs Caramel 120L

Hops
2oz Goldings @ 60min

Yeast
S-04
 
Should I reduce the chocolate wheat malt by a quarter pound, and replace it with roasted barley?
 
.75# isn't an unreasonable amount of chocolate in a stout... many people put more.

I recently made this oatmeal stout:

11.07# Maris Otter
1.7# rolled oats
1# choc malt
.56# roast barley
.5# crystal 40
.5# crystal 90
.5# crystal 120
.33# aromatic

If you're afraid of your beer having too much roast, don't be. My recipe had a really nice chocolate and cream impression... not acrid at all. Your wheat is somewhat of a substitution for my oats.

You can increase your chocolate, or keep it the same, but you need a minimum of a quarter pound of RB, and as much as 1#
