How important is the water to grain ratio when mashing? If there is excessive water, what are the effects?

It's only detrimental if you start exceeding 3 qts/lb. You can start diluting the enzymes and it will take longer to convert.

You must have one big mash tun to be able to go over 3qts/lb of grain!

No, it's a partial. I am at 3qt / pound. Don't know what I was thinking, it was a long night last night.

Been there before... Good news is that since your doing a PM, you can easily bump up the amount of extract and fix and the effiency issues you might have with the grains.squidbait

You think if I double my mash time I can recover?
Conversion isn't just a factor of time- it has to do with pH. I'd just finish it, and move on.

It can't hurt thats for sure. The only real way to tell is to do an iodine test to see if you are getting conversion, but if you can't do that, I'd say pull a sample of the wort out of the mash and check the gravity to ensure you are getting something out of it.
