I am making raspberry wheat beer and I am using fresh fruit. So, should I boil the fresh raspberries first and then add to the secondary or just add them as is? I have seen both suggested - anybody care to comment?

When i made a fruit beer, I used a 1/2 can of Oregon raspberry fruit puree in the primary.
After 2 weeks in primary, I kegged it.
The fruit beer was "tart" It took about 6weeks before it mellowed out and became a blonde with a hint of raspberry taste without the tartness. Slight aroma of raspberry also.

Just make sure if you are using fresh fruit, to blanch them to "kill" any bacteria.

Hope this helps.

I am drinking a razzy wheat that brewed in February. I blanched raspberries that I bought from the grocery store. Turned out fine!
