I picked up some harvested ale yeast from a local microbrewery. I ended up getting about 8 oz of harvested yeast in my 12 oz jar. Its been refrigerated and it looks like its pretty much all pitchable. I'm making a 5.5 gallon recipe on saturday, 1.050 OG. This seems like waaayyy too much yeast to use for a 5.5 gallon batch. I was thinking that I should pitch about half . What do you guys think?
